"The Best of Both Worlds:  Progressive Techniques, Traditional Winemaking"

At Tallulah our distinctive style of winemaking is born out of the marriage of classic, artisanal winemaking concepts and cutting edge techniques. 

We believe there is still much to be learned from the traditional methods, tested by time, that have consistently produced elegant and ageworthy wines, across different continents, climates, and eras. 

We also believe that these traditional concepts can be improved upon with the help of modern techniques, particularly in light of the unique challenges of the New World Terroirs.  

In borrowing the best of both worlds, we rely on the following four tenets of winemaking to create high quality, single-vineyard wines, with a ripeness of fruit that makes them accessible and enjoyable to drink now, and a balance and complexity that ensures that they will age and evolve for years to come... 

•Grapes are picked based on ripeness of flavors and skins not on an arbitrary number

•Whole cluster usage and spontaneous fermentation leads to greater complexity and nuance

•Tannins and acidity create the backbone of wine and we like our wines to have strong backs

•Restrained use of new oak, to enhance the wine and not to compensate
