The Farina vineyard is famous for its intense rocky, well drained soils producing wines with piercing minerality and depth. A Sauvignon Blanc true to the great wines of the Loire. It can be drunk young but has the ability to age for a decade. The fruit was whole cluster pressed at low pressures to ensure a gentle extraction of fruit. Settled at 50 degree F for 24 hours then racked off its solids. A mix of French Oak and stainless steel was used with only 20% of the wine going to barrel. Fermentation was carried out with native yeasts over a 4 week period. The wine did not undergo malolactic fermentation to help keep the acidity high and lively. After 14 months of aging the wine was blended and settled before bottling.
